Chop up green onion, red pepper, & cilantro & mix in a big bowl with 1 tbsp. of white vinegar, cumin (and/or whatever spices you like), salt & pepper

Add cooled quinoa & spinach & feta & add remaining ingredients & mix together.

You can add olive oil & balsamic vinegar or your favourite dressing when ready to serve.


Mmmm, sounds yummy. I have also done quinoa, cucumber, tomato with feta cheese with a balsamic dressing

Indian low fat Vegetable curry.
I made this dish a few times and it's been a hit with everyone who tried it.

1 onion diced
4 garlic cloves minced
ginger (equal to garlic)
1 Tablespoon Curry Powder
1/2 tablespoon Cumin
1/4 teaspoon cyanne powder
1/2 teaspoon chilli powder
1-2 cups of chopped vegetables (potatoes, cauliflower, zuchini, broccoli) you can substitute meats here if you like
1 diced tomato
1.5-2 cups water

toss the onion, ginger, and garlic into a large pot and water fry (use 1-2 tablespoons of water at a time). Fry it until the onions are carmelized.
add spice mixture and toast it in the pot being careful not to burn the spice. if you're using meat, add it to the pot and cook it down for 15-20 minutes until it absorbs the spice flavors.

add the tomato and cook for 1-2 minutes then add the potatoes and water and let cook until potatoes are almost tender. add vegetables and cook for 5-10 minutes.

serve on a bed of rice.

Too complicated.

Typical lunch:

1/2 Cup of Brown Rice or whole wheat pasta
5 oz chicken/turkey/fish
Steamed veggies
Hot sauce to taste

Season with whatever you want as long as it is low sodium.

Done.

Mid Morning snack:

1 multigrain toast with 1 tsp almond butter
1/2 can of tuna with mustard.

Green Soup - this was a big hit when my kid was little

Take 1 small onion, chopped, 2-3 zuchini - chopped, Add 1 stock cube and 4 cups water. Bring to boil, and simmer about 20 minutes. Add 3-4 Laughing Cow cheese wedges (lite works really well here) and using an immersion blender, blend the soup. You can add whatever seasonings that you and your family enjoy such as thyme or basil. No fat, lots of fibre and veggie goodness and some protein from the cheese.

Forgot to add that if you want the soup to be a bit thicker, you can add one large potato cut up in the beginning.

Soup is good cold too.

Hahah...I don't really use a recipe. I just buy some veggies, chicken stock and sometimes some noodles of some sort...and chicken or turkey....and make a soup...nothing fancy :) I usually put carrots, celery, onion and sometimes potatoes. This year I'm going to try some with sweet potato because a genius on this board told me they are better for you than white potatoes...who knew?????

I also got the Longo's book with the recipes...some looked ok but they are not healthy for the most part :) But I might try one or two but try to use lower fat stuff to make them healthier! Over this weekend and the long weekend, I'm planning on getting my food organized and ready to go. It's tough when I go back to work, but I have to make it work this year! I am usually pretty good for Monday to Wednesday...because I make food on the weekend and eat it...but by Thursday I'm sick of it and want to move on. So I have to either make more....or make more things. We shall see :)

Just curious if you can substitute the coconut oil as I have a nut allergy and do not wish to find out if it includes coconut oil as I am allergic to coconut already, thanks

I made a taco salad today...after being 'inspired' by the one I had at Rad Brothers last week.

I cooked some lean ground beef. I also put onion in that. A tiny bit of my shephard's pie seasoning, but you could use any seasoning for your meat.

In my salad I had lettuce, cucumber and snow peas. I used some oil/vinegar for dressing. I put the veggies in a big bowl, put the meat on top (only about a cup) and then shredded some low fat (blue menu) marble cheese on top. Soooo good! I also put some nachos around the perimeter. It was a tonne of veggies, which killed my stomach, but not for too long so not so bad :) The one at Rad brothers was better, but likely more fat and calories in it as well. Going to have another one for lunch tomorrow! :)
