You need a separate switch. I'm not an electrician but I believe if you've got a neutral wire in your circuit the electrician can install a double-switch within the single-gang box which would effectively give you two switches using the same wiring. Or you could just have him run a completely separate switch + wiring. Your worst case scenario here would be a bit of drywall patching (likely no bigger than a playing card).

You can do that. At that point finishing becomes a DIY project - it's fairly simple to pop in some extra potlights. The hard part is fishing wiring from your one potlight to where you want the others (and that's not even that hard)...
