Congrats on the house! I'm guessing you were referring to the waffle ceiling (on the 1st page) instead of the tray ceiling (a raised ceiling usually found in the master bedroom since it cuts into the attic).
I don't know the cost Mattamy is charging for the waffle ceiling in the Lucan Great Room, however, I'd highly recommend doing it after closing. It would be a lot cheaper. It will run you about $15 per square foot. Through Mattamy, I'd expect at least double/2.5x (considering what they're charging for regular crown moulding alone through the design centre)
Liam from LOC Carpentry (on the forum) has down a lot of waffle ceilings for people here on HV. May want to give him a shout. He does the waffle ceiling it sounds like you're looking for (smaller, thinner bulkheads).
