Can you drill/screw into these to hang a hook or anything like that. I thought they were hollow so just wondering what you have used if you have anything hanging there.

You can use what's called a Hollow Wall Anchor, most major hardware stores carry them - Home Depot, Rona, Home hardware. The door panel itself is typically 3/16" thick and the HWA's cover thickness ranges, you should be able to find an HWA that will fit thicknesses from 1/8" to 1/4" - should be more than suitable for your hollow door.
