I suppose it depends on what you want to do all day.
Are you going with kids to lounge at the resort or wifey to sightsee or flying solo to score European babes at the beach?

I would be going with my husband and our two children ages 9 and 12. I am really sort of looking for any opinions that people may have regarding which resorts/towns they preferred.

We went to Cayo Co Co and stayed at the Hotel Playa Co Co. It was great and believe it or not, the food was amazing! (not something you hear when you're talking about Cuba)

Iberostar Varadero!!!

We went there with moderate expectations and loved it so much we went back again. Great service. Food was moderate, but compared to mexico and dominican, probably at least as good and likely better. basically, unless you are planning on going to barbados or turks and caicos or somewhere on the "next level", cuba is just as good as similarly priced destinations. we loved it, beaches great. very clean. close to havana, take a tour and it's great.

and cuba has better dancers/entertainment than mexico or dominican.

I stayed at the Paradisus del Mar in February and it was really great. Best 5* I have been to in Cuba. Buffet was great for Cuba! Drink service on the beach and pool. 24 hr food/drink. Great shows. Beautiful resort overall - Highly recommended, but of course, depends on price.

I went about 5 years ago the price is a lot cheaper than other Caribbean location. We stayed at Tryp in cayo coco it had an amazing beach but the food was lacking.

Been to the Bahamas, Mexico and a few times since then and would rather pay more to go there instead of Cuba.

We went to Cuba in November for the first time. We have been to Mexico, Dominican etc many times, but decided to try something different. My wife's co-worker told us about Cayo Santa Maria (its a newer area being developed in Cuba). We stayed at Melia Las Dunas. It was an AMAZING trip. The beaches were awesome and the food was amazing. Everyone warned us that Cuba had terrible food, but this place was great. A co-worker of mine goes to Cuba at least twice a year and I suggested this place to him as he had never been to this area and he said in his 20+ trips to Cuba this by far the best resort all around. We travelled with our 2 year old and he had a great time. I highly recommend it. There is only 1 down side and that is the bus ride from the airport. It is about 90 minutes, but it is very scenic and you travel through towns and villages which is really cool (and they have cold beer on the bus). The other cool thing is you land in Santa Clara, Cuba. This airport can only handle 1 airplane at a time. This means no waiting and no crowds at all. We loved it. It is next to Paradisus & the beach is wayyy better.
We got married on the beach 5 years ago !
Our closest family & friends joined us & everyone had a great time & luvd it.
Lots of activities for the kiddies too.

Staff are wonderful, food is good, rooms are big and a lovely beach, can't wait to go back myself.

+1 to above, and you can get really good deals here. We booked Las Dunas last minute in 2009 for under $800 taxes-in, in January. Best beach I have ever seen.

It is a large resort though, so be prepared to walk if you aren't close to the centre (although they do have golf cart shuttles that drive around).

The one downside we found there was too many Quebecers, frickin annoying!
